Sweet Potato Zucchini Beef Casserole

Are you ready to prepare a delicious, healthy meal that perfectly aligns with the principles of the Caveman Code? Then try this flavorful recipe packed with nutritious ingredients and spices!


Ingredients:

  • 2 large sweet potatoes, diced

  • 2 zucchinis, sliced

  • 2 red bell peppers, sliced into strips

  • 4 tomatoes, diced

  • 500 grams lean ground beef

  • 1 onion, finely chopped

  • 2 cloves garlic, finely chopped

  • 1 tablespoon olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika powder

  • 1 teaspoon dried oregano

  • 1/2 teaspoon chili powder (optional, for extra heat)

  • Fresh parsley or cilantro, finely chopped (for garnish)


Instructions:

  1. Preheat the oven: to 200°C (392°F).

  2. Prepare the sweet potatoes: Place the sweet potato cubes on a baking sheet, drizzle with a little olive oil, and bake in the preheated oven for 20-25 minutes, or until tender and lightly golden.

  3. Cook the ground beef: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until soft and fragrant. Add the ground beef and cook until browned and cooked through.

  4. Add the vegetables: Add the zucchini slices, bell pepper strips, and diced tomatoes to the skillet with the ground beef. Cook for 5-7 minutes until the vegetables begin to soften.

  5. Season: Add the ground cumin, paprika powder, dried oregano, and chili powder (if using) to the pan. Stir well and cook for another 2-3 minutes to let the flavors meld.

  6. Combine and serve: Remove the sweet potato cubes from the oven and add them to the skillet. Mix everything well together. Serve the casserole warm, garnished with fresh parsley or cilantro.
